This recipe came from a cookbook compiled by a boy named Harry as a gift to his mother for Christmas, 1941. He had handwritten her personal recipes. We were intrigued by the name of the pie, which featured wedges of apple laid out in uniform rows, much like cobblestones. We added the toasted almonds betwen the rows for “mortar,” brushed the cobblestones with molasses before baking, and sprinkled the apples with sanding sugar. We baked the pie as a tart.
